For example I may be listening to the podcast

The Force-Cast:Star Wars News and Commentary

and the track name is

Microcast: In the Cantina with Anthony Daniels

Now up the top, I can see

The Force-Cast:Star Wars New...
Microcast: In the Cantina with...

If I flip the phone on its side I see

Microcast: In the Cantina with Anthony...

Pressing the 'i' gives me even less :

Microcast: In the Canti...

There's also a bunch of info in the Video description in iTunes which isn't displayed at all on the iPhone. (It's displayed in iTunes when you click on the 'i'.)

With so much screen real-estate surely there's some way of showing this info on the iPhone? Is there some gesture I don't know about?

AFAIK there's no gesture or other iPhone native function that could help you with this. However (and until someone smarter than me gives you a better answer) you could check out the apps I recommend in this question, namely SongVoo and FlickTunes, which both offer a bigger display of the track info.
